This low-sugar picnic coleslaw is a great side dish for any meal, and especially during the summer. It’s super easy to make when you buy pre-shredded cabbage. The apple and toasted nuts add additional crunch and natural sweetness. The dressing remains low-sugar and packed with protein from the Greek yogurt, which is quite unusual for this type of side and makes it a favorite in my low-starch recipe cookbook for the season. Serves 6 as a side dish

Coleslaw Ingredients

1 cup plain Greek fat-free yogurt

1 1/2 tsps sugar

3 Tbsp apple cider vinegar

1 bag (12 oz) or 1/2 medium head green cabbage, shredded

1/4 cup chopped walnuts or pecans, toasted

1/2 medium apple, diced

Coleslaw Directions

  1. In a large bowl combine the yogurt, sugar, and apple cider vinegar.
  2. Add the shredded cabbage, nuts, and chopped apple, and toss to combine well.
  3. Allow to marinate 30 minutes, or serve immediately.
