This low-sugar picnic coleslaw is a great side dish for any meal, and especially during the summer. It’s super easy to make when you buy pre-shredded cabbage. The apple and toasted nuts add additional crunch and natural sweetness. The dressing remains low-sugar and packed with protein from the Greek yogurt, which is quite unusual for this type of side and makes it a favorite in my low-starch recipe cookbook for the season. Serves 6 as a side dish
Coleslaw Ingredients
1 cup plain Greek fat-free yogurt
1 1/2 tsps sugar
3 Tbsp apple cider vinegar
1 bag (12 oz) or 1/2 medium head green cabbage, shredded
1/4 cup chopped walnuts or pecans, toasted
1/2 medium apple, diced
Coleslaw Directions
- In a large bowl combine the yogurt, sugar, and apple cider vinegar.
- Add the shredded cabbage, nuts, and chopped apple, and toss to combine well.
- Allow to marinate 30 minutes, or serve immediately.
